Baked asparagus with cherry tomatoes

  • 1 bunch of fresh asparagus (about 500 g)
  • 200 g cherry tomatoes
  • Extra virgin olive oil, as needed
  • Salt and pepper, to taste
Preparation


First, wash the asparagus well under running water to remove any soil residue. Then lightly peel the lower part to remove the tougher skin. Trim off the woody ends of the stalks, which tend to be too fibrous.

In a baking dish, drizzle a little extra virgin olive oil and lay out the asparagus evenly. Season with salt and pepper to taste.

Cut the cherry tomatoes in half and distribute them around the asparagus. The tomatoes will add a touch of color and a sweet flavor that pairs perfectly with the asparagus.

Bake everything in a preheated oven at 180°C (356°F) for about 20–25 minutes, or until the asparagus is tender and lightly golden. Every oven is different, so check for doneness with a fork.

Once ready, remove from the oven and serve hot. You can enjoy them with some crusty bread or serve them as a side to meat or fish dishes.
