					- 12 scallops (3 per person)
- 1 garlic clove
- 4 fresh basil leaves
- Black pepper, to taste
- Sweet paprika, to taste
- Salt, to taste
- Fresh chives, to taste
- 4 tablespoons extra virgin olive oil
- 3 tablespoons breadcrumbs
- 2 tablespoons brandy
Start by gently removing the scallops, separating the white part from the shell, and rinsing them under cold water. Pat them dry carefully with kitchen paper, making sure not to damage the delicate flesh.
Finely chop the garlic clove, basil leaves, and chives. In a bowl, mix the breadcrumbs with the garlic, herbs, a pinch of salt, pepper, and sweet paprika, then add the extra virgin olive oil. This will create a fragrant and light mixture.
Place the scallops in a lightly greased baking dish. Top each one with a bit of the aromatic mixture and drizzle a splash of brandy over them.
Preheat the oven to 180°C (350°F). Bake the scallops for about 10–12 minutes, or until the surface is golden and crispy. Avoid overcooking to keep their texture soft and tender.
