Baked Sea Bass

Ingredients


  • 2–3 sea bass for a total of about 1 kg
  • 800 g potatoes
  • 2 garlic cloves
  • 2 sprigs of rosemary
  • 4–5 sage leaves
  • 1 bunch of parsley
  • salt and pepper to taste
  • fine salt to taste
  • coarse salt to taste
  • 4 tablespoons extra virgin olive oil
Preparation


Start by preparing the potatoes. Peel them or, if you prefer, leave the skin on; slice them, then wash and dry them and place them in a bowl.

Chop a garlic clove and add it to the potatoes together with rosemary, pepper, salt, and olive oil. Mix well so they are evenly seasoned.

Now take a large baking tray, line it with parchment paper, oil it, and place the cleaned fish inside, opened at the belly so they can be filled with rosemary, parsley, sage, garlic, and a pinch of coarse salt.

Add the prepared potatoes to the tray, arranging everything evenly.

Bake in a preheated static oven at 200°C for about 30 minutes. Cooking time may vary depending on the size of the fish.

Once ready, serve hot and be careful when removing the bones.
