Baked Sea Bream with Potatoes

  • 4 fresh sea bream
  • 4 or 5 medium potatoes
  • Extra virgin olive oil
  • Fine salt
  • Paprika
  • 2 garlic cloves, chopped
  • Aromatic herbs (rosemary, parsley)
  • Cherry tomatoes as needed
Preparation


Start by washing the potatoes thoroughly under running water and cutting them into wedges.

In a large bowl, season the potato wedges with extra virgin olive oil, salt, paprika, and chopped garlic. Mix everything well.

Take the sea bream and make a cut along the belly, from below the head to the tail, to remove the innards. Rinse the inside well under running water.

Stuff the belly of each sea bream with a garlic clove, a few sprigs of rosemary, parsley, and a pinch of salt.

Place the sea bream in a baking dish with the potatoes and add a few cherry tomatoes for a touch of color.

Finally, drizzle the sea bream with a bit of olive oil and a pinch of salt before baking everything in a preheated oven at 200°C (390°F) for about 25–30 minutes, or until the potatoes are tender and the fish is cooked through.
