Chicken Breast with Peppers and Olives, Deglazed with Beer




- 600 g of chicken breast, sliced
- 2 large peppers (one red and one yellow for extra color)
- 100 g of large green olives (pitted and halved)
- 1 garlic clove
- Flour as needed (for dusting the chicken)
- 1 sprig of rosemary
- Ground ginger as needed
- Juice of half a lemon
- Light beer as needed (approximately 200 ml in total)
- Extra virgin olive oil as needed
- Salt as needed
First, take care of the vegetables. Wash and clean the peppers thoroughly, then slice them into thin strips. In a large pan, drizzle some extra virgin olive oil and add a whole garlic clove (which will be removed later). Warm the oil slightly and add the peppers, letting them fry at high heat for a few minutes while stirring.
Once the peppers start to soften, deglaze with a little beer (about half of the total amount), add a pinch of salt and a sprinkle of ground ginger. Then add the halved olives and deglaze with another splash of beer. Cover the pan with a lid, turn off the heat, and let it rest so the flavors can develop.
Meanwhile, move on to the chicken. Cut the chicken breast slices into wide strips and lightly dust them with flour. In another pan, heat some olive oil with a garlic clove (which you will remove once it turns golden), then brown the chicken pieces on both sides until they begin to color. Add a sprig of rosemary to infuse the aroma.
When the chicken is nearly cooked, reheat the pan with the peppers and olives over the heat. Add the lemon juice and a bit more beer. Let the flavors meld briefly, then pour everything into the pan with the chicken. At this stage, toss everything over high heat to thoroughly combine the ingredients and bind the flavors together.
Turn off the heat, drizzle with a little extra virgin olive oil raw, and serve hot.
