Hard-Boiled Egg Bites



- 4 eggs
- 1 generous handful of fresh greens (e.g. lamb's lettuce, arugula, or mixed greens)
- ½ red bell pepper, finely diced
- Fine salt, to taste
- Freshly ground black pepper, to taste
- Curry powder, a light dusting
- Extra virgin olive oil, to taste
To prepare these bites, start by boiling the eggs. Place them in a saucepan with cold water and bring to a boil. Once the water starts boiling, cook for 8–9 minutes. Drain and immediately cool under running cold water to stop the cooking and make peeling easier.
Gently peel the eggs and cut them in half lengthwise. For extra flavor, you can remove the yolks, mix them with a drizzle of oil and a pinch of curry, and then place them back into the egg whites. Or just leave them plain—they’ll still be delicious.
Meanwhile, dress the greens with a bit of olive oil, a pinch of salt, and some freshly ground black pepper. Place a small amount of the seasoned greens on each egg half, along with a few tiny cubes of raw red pepper, which add freshness, color, and crunch.
Finally, sprinkle a light dusting of curry powder over each egg. Use just a tiny bit—enough to add a subtle hint of spice without overpowering the other delicate flavors.
Arrange the eggs on a serving platter and present them as finger food for a simple yet flavorful appetizer.
