Mediterranean Bruschetta
					Few things evoke the feeling of home and the sea like a good bruschetta. Crunchy, fragrant, and full of flavor, this version with anchovies, red onion, capers, extra virgin olive oil, and fresh parsley captures all the simplicity and authenticity of Mediterranean cuisine.

					Ingredients
				- 8 slices of rustic bread (homemade if possible)
- 1 large red onion (or 2 small ones)
- 8 anchovy fillets in oil
- 1 cup of desalted capers
- 1 bunch of fresh parsley
- Extra virgin olive oil, to taste
Preparation
				Preheat the oven to 200°C (400°F) and start toasting the bread: 5–6 minutes are enough, until it turns golden and crisp. Alternatively, you can use a grill pan or toaster.
In the meantime, finely chop the red onion and parsley, and rinse the capers to remove any excess salt.
Now assemble your bruschette: on each warm slice of bread, place a little onion, then a fillet of anchovy in oil, another thin slice of onion to finish, a few capers, and a sprinkle of fresh parsley.
Finish with a generous drizzle of olive oil and serve immediately, while the bread is still warm and crunchy.
