Roast beef


A timeless classic that brings the comforting smell of home and always impresses, even on the simplest occasions. Roast beef is one of those dishes we love to prepare when we want something hearty, aromatic, and perfect to share with good company. Here’s our version, scented with rosemary and garlic, with a cooking method that keeps the meat tender and juicy.

Ingredients


  • 800 g roast beef (about 200 g per person)
  • 2 garlic cloves
  • 2 sprigs of fresh rosemary
  • Extra virgin olive oil, as needed
  • Salt, to taste
  • Freshly ground black pepper, to taste

If you’d like an alternative seasoning, you can make a quick sauce by mixing:

  • 4 tablespoons extra virgin olive oil
  • 1 level teaspoon smoked paprika
  • ½ teaspoon garlic powder

 

Preparation


Make sure the roast beef is at room temperature before cooking, so take it out of the fridge at least 30 minutes beforehand.

In the meantime, prepare the marinade: finely chop the garlic and rosemary needles. In a bowl, mix these aromatics with a generous drizzle of extra virgin olive oil, salt, and freshly ground black pepper. Stir well until you have a uniform mixture.

Massage the roast beef with this marinade, spreading it evenly over the entire surface of the meat. Let it rest for a few minutes so the flavors can start to infuse.

Heat a pan over medium-high heat with a drizzle of extra virgin olive oil. When it’s nice and hot, sear the roast beef on all sides for 2–3 minutes, until a golden crust forms.

Transfer the meat to a baking dish, drizzle it with the juices from the pan, and roast it in a preheated oven at 200°C (390°F) for about 20–25 minutes for medium-rare doneness. Adjust the cooking time based on your preferred doneness.

Once cooked, remove the roast beef from the oven and let it rest for 5–10 minutes before slicing. This will help the juices redistribute, keeping the meat tender.

Slice it thinly and serve it with a drizzle of extra virgin olive oil and your favorite side dish: potatoes, grilled vegetables, or a fresh salad.

Alternative seasoning (for a spicy twist):
If you’d like to add a bold touch to the dish, you can make a quick sauce by mixing:

  • 4 tablespoons of extra virgin olive oil
  • 1 level teaspoon of smoked paprika
  • ½ teaspoon of garlic powder
